Is there a low profile fluorescent lighting fixture for undercabinet use that will match the color temperature of my fluorescent ceiling light?

you should be able to look at the model of tube that you're using in your overhead units. look up the model # from the manufacturer and there should be a CRI or Color Rendering Index, consequently, the CRI Rating may come with a Kelvin rating, or color temperature rating. Once you find that, find a tube that matches that.

As far as fluorescent technologies go, there is no fixture that'll change color temps. Only the gas and phosphors used in the tube itself will determine the CRI and Color temperature (read appearance).
